Ingredients

Mandazi dough
3 tsp. dry, instant yeast
1 1/2 tsp. white sugar
1/2 cup water
1/3 cup canned, full-fat coconut milk
1 1/2 Tbsp. non-dairy butter, unsalted
1/4 tsp. salt
7 1/2 tsp. white sugar
1 1/4 pt. all-purpose flour
1 1/2 tsp. Chai spice

Chai sugar
3/4 cup white sugar
3 Tbsp. Chai spice

Preparation

  1. For Mandazi dough: In a bowl, of a stand mixer, combine yeast, sugar, and water and mix well. Set aside for 10 minutes until foamy.
  2. In the same bowl, add coconut milk, non-dairy butter, salt, and sugar to yeast and whisk to combine.
  3. In a separate bowl, combine flour and Chai spice mix. With dough hook attachment, gradually add flour to liquids with mixer on low speed. Once all flour has been added, increase speed to medium for 5 minutes until a smooth dough forms.
  4. Transfer dough to a lightly oiled bowl, cover with plastic wrap, and put in a warm place for 1 to 1.5 hours or until the dough has doubled in size.
  5. Heat fryer to 350°F. On a lightly floured surface, turn out the dough. Cut it into 4 oz. pieces. Working with one piece at a time, gently roll it out to a 1/4″ thick circle and then cut into 4 triangles. Repeat with the remaining pieces of dough and transfer all the triangles to a parchment-lined sheet tray.
  6. Without overcrowding the fryer, drop 2-4 pieces of dough at a time and cook for 2 minutes; flip and cook on the other side for 1 minute. Dough will puff up and be golden brown. Transfer to a paper towel-lined sheet tray to drain excess oil. Allow to cool for 2-3 minutes.
  7. For Chai sugar: Combine white sugar and Chai spice mix, ensuring all sides are evenly coated. Serve immediately.

Serving suggestion: Serve with plant-based yogurt and fresh fruit coulis.
