Ingredients

24 avocados, fresh, whole, peeled
1/4 cup Kosher salt
1 cup lemon juice

Avocado toast with cherry tomatoes and balsamic glaze
1 1/2 quarts avocados, fresh, sliced
1 cup lemon juice
12 slices multi-grain bread
1 1/2 pints cherry tomatoes, small, halved
1 1/2 cups balsamic glaze

Basic avocado toast
12 sliced multi-grain bread, toasted
2 tablespoons red pepper flakes
1 1/2 cups radish, sliced
3/4 cup green onions sliced thinly on bias
1/4 cup olive oil

Protein packed avocado toast
3 teaspoons Kosher salt
3 quarts garbanzo beans, canned, drained, rinsed
3/4 cup olive oil blend
2 tablespoons smoked paprika, ground
2 tablespoons garlic powder
2 tablespoons onion powder
3 teaspoons chili powder
1 tablespoon Kosher salt
12 slices multi-grain bread
4 tablespoons Zaatar mix

Preparation

  1. For the basic and protein avocado toast: In a large mixing bowl, add first listed avocados, salt and lemon juice. Mash until it reaches a creamy consistency. Store in a sealed container in cooler until service.
  2. For the avocado toast with cherry tomatoes and balsamic glaze: In a mixing bowl, toss sliced avocado with lemon juice. Store in a sealed container in cooler until service.
  3. Lay out 4-5 avocado slices along toast, top with 1/4 cup cherry tomatoes and drizzle with 2 tablespoons balsamic glaze and sprinkle 1/2 teaspoon of salt.
  4. Basic avocado toast: Spread 1/2 cup of mashed avocado on toast. Top with 1/2 teaspoon of red pepper flakes, 2 tablespoons of radish slices and 1 tablespoon of green onions. Drizzle with 1 teaspoon of olive oil.
  5. Protein packed avocado toast: Preheat oven to 350 degrees. Add garbanzo beans, oil and spices, except zaatar to a bowl and toss to combine. Transfer garbanzo beans to a lined baking sheet and bake for 30-35 minutes or until crispy. Allow to cool.
  6. To serve: Spread 1/2 cup mashed avocado on toast, top with 1/4 cup of garbanzo beans and 1 teaspoon of zaatar.
