Ingredients

Meatballs
7 cups Beans, Lentils, cooked
2 cups Onions, Yellow, small dice
2 cups Crumbs, Panko Bread
1 1/2 tsp Garlic, powder
3/4 tsp Salt, Kosher
3 tbsp Oil, Canola

Sticky Sauce
1 tbsp Oil, Sesame
2 tbsp Garlic, cloves, peeled, minced
1 tbsp Ginger, fresh, minced
1 tsp Red Pepper Flakes
2/3 cup Vinegar, Rice Wine
2 tbsp Soy Sauce, Light Sodium
1 cup Sauce, Hoisin
1/2 cup canola oil

Nuoc Cham Sauce
2 tbsp Sugar, White, granulated
3/4 cup Water, hot
3/4 cup Soy Sauce, Light Sodium
1/4 cup Limes, juice
3 tsp Sauce, Chili Garlic

Slaw
4 1/2 cups Cabbage, Coleslaw Mix
1 1/2 cups Carrots, peeled, shredded
1/4 cup Sugar, White, granulated
2 tbsp Vinegar, Rice Wine

Noodles
12 cups Noodles, Rice, Cooked
2 1/4 cups Edamame, hulled, frozen
1 1/2 cups Vegan Kimchi
2 tbsp Sesame Seed, whole

Preparation

  1. For Meatballs: In a food processor, pulse lentils, onions, bread crumbs, garlic powder, salt, and canola oil. Pulse all ingredients until broken down but not into a paste. Form mixture into 1.5oz balls and place in freezer for at least 30 minutes before searing off.
  2. Sticky sauce: To a skillet heat oil over medium heat. Sauté garlic, ginger and red pepper for 1 minute or until fragrant. Add rice vinegar, soy sauce, and hoisin sauce. Bring to a simmer and cook for 2-3 minutes until slightly reduced. Hold hot.
  3. To a skillet heat oil over medium-high heat. Sear meatballs on all sides for 3-5 minutes or until evenly browned. Pour over reserved sticky sauce from step 2 and toss to coat meatballs. Hold meatballs hot for service.
  4. Nuoc Cham Sauce: In a small bowl whisk sugar and hot water until dissolved. Whisk in soy sauce, lime juice, and chili garlic sauce until combined. Cover, and reserve in cooler until service.
  5. For Slaw- In a large mixing bowl, combine cabbage, carrots, sugar, and vinegar. Cover, and hold in cooler until service.
  6. To Serve: In a serving bowl, place 1 cup rice noodles in center of bowl. Top with 1/2 cup of slaw, 3 tablespoon of edamame, 3 meatballs, and 2 tablespoons of kimchi. Drizzle 2 tablespoons of Nuoc cham sauce. Garnish with 1/2 teaspoon of sesame seeds. Serve.
