Ingredients

Batter
1/3 cup brown flax seed, ground
3/4 cup water
5 1/4 cup non-dairy milk, unsweetened
3 tablespoons apple cider vinegar
5 1/4 cups all-purpose flour
3 tablespoons baking powder
1 1/2 teaspoons Kosher salt
1/2 cup white granulated sugar
3/4 cup non-dairy butter, unsalted, melted
1 tablespoons vanilla extract

For service
3/4 cup strawberries, fresh, sliced
3/4 cup blueberries, fresh
3/4 cup raspberries, fresh
3/4 cup blackberries, fresh
3 cups maple syrup

Preparation

  1. For flax egg: In a small bowl, combine flax seed and water. Stir and set aside for 5 minutes until mixture thickens.
  2. For vegan buttermilk: In a large bowl, add non-dairy milk and apple cider vinegar. Stir. Set aside for 5 minutes until mixture begins to curdle.
  3. In a large mixing bowl, whisk together flour, baking powder, salt, and sugar.
  4. Add flax eggs and buttermilk to dry ingredients. Stir until just combined with a wooden spoon. Do not over-mix. The batter should be thick and it’s okay to have some lumps.
  5. Using an 8 ounce ladle, pour waffle batter onto hot waffle maker and cook for 5-7 minutes or until waffle is golden brown on both sides. Spray plates with oil before adding batter if waffle maker does not include non-stick plates.
  6. For service: Top waffle with 1/4 cup of fresh berries and drizzle with 1/4 cup maple syrup. Serve immediately.
