Black Bean & Sundried Tomato Pasta

Ingredients

2 tablespoons canola oil
1 cup white onions, small diced
2 tablespoons garlic cloves, peeled, minced
5 2/3 cup black beans, canned, low-sodium
1 cup sundried tomatoes, julienne, oil drained
1 1/4 cups panko breadcrumbs
2 tablespoons Italian seasoning
1 tablespoon Kosher salt
1 1/2 teaspoons ground black pepper
2 tablespoons canola oil
6 cups marinara sauce
1/4 cup fresh basil, chopped
9 cups penne pasta, whole wheat, cooked

Preparation

  1. On a flat top grill, heat first listed oil over medium-high heat. Add onions and cook for 3-5 minutes. Add garlic and cook for 1 minute. Remove from heat and let cool.
  2. In a food processor, pulse onion/garlic mixture. Add black beans, sundried tomatoes, panko breadcrumbs, Italian seasoning, salt and pepper. Pulse until broken down and combined but not over-processed into a paste.
  3. Portion out 1.5 ounces of the mixture and roll into balls on a parchment-lined sheet tray. Freeze for 10 minutes or refrigerate for 30 minutes. This can be done in advance if needed. You can place meatballs in a hotel pan wrapped in plastic wrap and freeze until needed.
  4. On a flat top grill or large skillet, heat second listed oil over medium-high heat. Sear off meatballs on all sides until golden brown and meatball is cooked through, about 2 minutes for per side. Meatballs can also be baked in the oven at 400° F for 20 minutes or until cooked through, flipping halfway. Hold hot for service.
  5. In a large pot on low heat, heat sauce for 10-15 minutes or until it reaches a simmer. Fold in basil. Hold hot for service.
  6. To serve: Add 1 1/4 cups of pasta to a bowl. Top with 1/2 cup of sauce and 4 meatballs.
