Thai Tempeh Fried Rice

Ingredients

Thai Tempeh Crumbles
8 1/4 cups Tempeh
4 tablespoons Canola oil
1 1/2 cups Soy Sauce
1 1/4 cups White sugar, granulated
6 tablespoons Chili Garlic sauce
2 tablespoons Lime juice
6 tablespoons Cilantro, fresh, chopped
6 tablespoons Basil, fresh, chopped, use Thai or Sweet Italian Basil
6 tablespoons Green onions, sliced thinly on bias

Fried Rice
6 tablespoons Canola oil
3 cups Yellow onions, sliced
6 tablespoons Ginger, fresh, minced
6 tablespoons Chili Garlic sauce
3 cups Red bell pepper, sliced
2 cups Broccoli, fresh, florets
12 cups Jasmine rice, cooked
3/4 cup Soy Sauce
2 tablespoons Sesame oil
3 cups Basil, fresh, whole Torn, use Thai or Sweet Italian Basil

Preparation

  1. Boil Tempeh in a pot or skillet of water for 10 minutes. Remove and allow to cool. Once cool enough to handle, crumble tempeh.
  2. For Thai Tempeh Crumbles – Heat oil in a skillet or flat top over medium high heat. Add tempeh and cook for 3-5 minutes, allowing tempeh to slightly caramelize and become crispy. While cooking tempeh mix soy sauce, sugar, chili garlic sauce and lime juice. When tempeh is ready, add sauce. Allow to cook and reduce for 3-5 minutes, or until all liquid has evaporated and tempeh is caramelized.
  3. Place tempeh into a mixing bowl and add cilantro, basil and green onions. Toss and hold hot for service.
  4. For Fried Rice – Heat oil in a large skillet or flat top grill over medium high heat. Add onions and cook for 3-5 minutes or until translucent. Add ginger, sauce, bell pepper, and broccoli and cook for 3-5 minutes or until vegetables are tender. Add rice, soy sauce, sesame oil and basil and cook until basil has wilted and everything is warmed through. Hold hot for service.
  5. To serve – In a bowl add 8 ounces Fried Rice and top with 4 ounces of tempeh crumbles.
