Ingredients
36 vegan meatballs
2 1/2 cups marinara sauce, low-sodium
1 1/4 cups extra firm tofu
1 cup cherry tomatoes
1/3 cup hot water
1 tablespoon Italian seasoning
1 tablespoon garlic cloves, peeled, chopped
1 teaspoon onion powder
12 cups spaghetti, whole wheat, cooked
Preparation
- Prepare meatballs according to package instructions.
- In a blender, combine marinara sauce, tofu, tomatoes, water, Italian seasoning, garlic cloves and onion powder. Blend until smooth.
- In a sauce pan, simmer rosa sauce over low heat. Alternatively, put sauce in hotel pan and heat in steamer. Hold hot for service, stirring occasionally.
- For service, portion 1 cup hot pasta onto plate and top with 1/2 cup rosa sauce and 3 meatballs.
