Ingredients

3 tablespoons canola oil
4 cups Crimini mushrooms, sliced
1 1/2 cups white onions, medium diced
2 teaspoons granulated garlic
1 teaspoon salt
1 teaspoon ground black pepper
6 cups vegan meat crumbles
1 1/2 cups green bell pepper, medium diced
2 tablespoons soy sauce, low-sodium
3 cups nacho cheez sauce
12 hoagie rolls, whole wheat, sliced

Preparation

  1. Heat oil in large sauté pan over medium-high heat. Add mushrooms and cook for 2-3 minutes.
  2. Add onions, garlic, salt and pepper. Sauté for 2-3 minutes or until onions are softened and translucent.
  3. Add vegan meat, bell pepper and soy sauce. Cook for 5-8 minutes or until crumbles are browned and cooked through.
  4. Prepare nacho cheez according to directions. Combine nacho cheez to mushroom mixture and hold hot for service.
  5. For service, portion 1 cup of mixture into hoagie bun.
