NUMU Cheese Shell Taco

This recipe was developed by the chefs at Oklahoma State University during one of our product trainings.

Ingredients

10 ounces Abbot’s Butcher ground beef
1/2 cup red onion, diced
1/4 cup cilantro, chopped
1/2 cup tomatoes, diced
1/2 ounce taco seasoning
18 ounces NUMU cheese
1/2 cup black olives, sliced
2 cups chopped romaine lettuce

Preparation

  1. Spray a sheet tray. Make 6-3 ounce patties of NUMU cheese. Bake at 400 degrees for 5 minutes.
  2. Scrape cheese from pan and fold into taco shell shape.
  3. Add ground beef to skillet and add taco seasoning. Cook, stirring occasionally until internal temperature reached 165.
  4. To serve – Top each cheesy shell with ground beef, red onion, tomato, olives, romaine and cilantro.
