Ingredients

3 cups flour, whole wheat
2 ½ cups cornmeal, yellow, fine, whole grain
1 cup sugar, white, granulated
¼ cup baking powder
1 ½ teaspoons salt, kosher
3 ½ cups non-dairy milk, soy, unsweetened
¾ cup applesauce, unsweetened
½ cup oil, canola

Preparation

  1. Combine flour, cornmeal, sugar, baking powder, and salt in a stand mixer with a paddle attachment and mix for 1 minute on low speed to combine.
  2. Combine soy milk, applesauce, and oil in a bowl and stir to combine. Add to dry ingredients and mix on medium speed for 2-3 minutes, until just combined. Do not over mix.
  3. Preheat oven to 400°F. Pour batter into oiled half sheet pan or use yellow #20 scoop to portion into muffin pans. Bake for 25-30 minutes until lightly browned. Cool 10 minutes.
  4. For 50 servings, cut each half sheet pan into 50 pieces (5×10). Each small piece will be about 2″x 2.5″.
