Ingredients

Baked Pita Chips
1 each, pita bread, 8”, each cut into 1×1 inch squares
2 tablespoons olive oil
1 teaspoon Italian seasoning

Seasoned Chickpeas
2 cups garbanzo beans, low sodium, drained and rinsed
2 tablespoons olive oil
1 teaspoon paprika, ground
½ teaspoon cumin, ground
½ teaspoon garlic, granulated
½ teaspoon salt, kosher

Yogurt Sauce
4 cups vegan yogurt, soy, plain
3 tablespoons lemon juice
2 tablespoons sunflower butter, unsalted
1 ½ teaspoons garlic cloves, peeled, minced, dried
1 teaspoon salt, kosher

*Optional, Dried Parsley Oil & Paprika for Service
2 tablespoons olive oil
2 teaspoons parsley flakes, dried, whole flakes
2 teaspoons vinegar, distilled, white
2 teaspoons paprika, ground

Preparation

  1. For baked pita chips: preheat oven to 350°F. In a large mixing bowl, toss pita bread squares, olive oil and Italian seasoning until combined. Transfer pita bread to a lined baking sheet and bake for 20 minutes flipping halfway. Remove from oven and reserve until service. *Optional, use 1 ounce of premade pita chips per serving.
  2. Seasoned Chickpeas: In a mixing bowl, combine chickpeas, olive oil, paprika, cumin, garlic, and salt until chickpeas are evenly coated. Transfer to a lined baking sheet and bake for 20-25 minutes, or until golden-brown, flipping halfway. Remove from oven and reserve until service.
  3. Yogurt Sauce: In a large mixing bowl, combined vegan yogurt, lemon juice, sunflower butter, garlic, and salt. Whisk until ingredients are incorporated. Reserve in cooler until service.
  4. *Optional, Dried Parsley Oil: In a small mixing bowl, combine olive oil, parsley flakes and vinegar, whisk to combine. Set aside for service.
  5. *Optiona, For Service: To a serving bowl, add ½ cup of yogurt sauce, followed by 1/4 cup of chickpeas. Top with 1ounce of pita chips. Drizzle 2 teaspoons of parsley oil and dust with a sprinkle of paprika.
