Ingredients
Muffin Filling
2 teaspoons oil, canola
2 cups vegan sausage, meatless crumbles or similar
1 cup red bell pepper, chopped
1 cup green onions, sliced thinly on bias
Cornbread Batter & Garnish
3 cups flour, whole wheat
2 ½ cups cornmeal, yellow, fine
1 cup sugar, white, granulated
¼ cup baking powder
1 ½ teaspoons salt, kosher
1 ¾ cups non-dairy milk, soy, unsweetened
¾ cup applesauce, unsweetened
½ cup oil, canola
1 ¼ cup vegan cheese, cheddar, shredded
¼ cup onions, green, sliced thinly on bias
Preparation
- For filling: In a large skillet or flat top, heat oil over medium high heat. Cook sausage for 5-7 minutes, breaking it up as it cooks. Transfer to a bowl. Add bell pepper and green onions to sausage and set aside.
- For cornbread batter: Combine flour, cornmeal, sugar, baking powder and salt in a stand mixer with a paddle attachment and mix for 1 minute on low speed to combine.
- Combine soy milk, applesauce, and canola oil in a bowl and stir to combine. Add to dry ingredients and mix on medium speed for 2-3 minutes, until just combined. Do not over mix. Fold cheese and sausage mixture into cornbread batter.
- Preheat oven to 400°F. Use light blue #16 scoop to portion batter into oiled muffin pan. Garnish each muffin with 1/2 teaspoon green onions.
- Bake 15-25 minutes until golden brown and a knife inserted into the center comes out clean. Cool and serve.
