Ingredients
36 vegan chicken nuggets, breaded
1 1/2 cups hummus, premade
2 teaspoons jerk seasoning mix
3 cups frozen mango chunks
3 cups coleslaw mix
1 tablespoon lime juice
12 whole wheat pita bread, 10″
Preparation
- Bake vegan chicken nuggets according to package instructions.
- In a mixing bowl, combine hummus and jerk seasoning. Reserve in cooler until service.
- In a mixing bowl, combine mango chunks, coleslaw mix and lime juice. Reserve in cooler until service.
- To assemble: Spread 2 tablespoons of jerk hummus on pita, top with 3 nuggets and 1/4 cup of mango slaw.
