Ingredients

2 cups russet potatoes, medium dice
2 cups carrots, peeled, chopped
3 cups cannellini beans, canned, drained, rinsed
1 1/2 cups nutritional yeast
2 tablespoons lemon juice
2 tablespoons canola oil
2 teaspoons garlic powder
2 teaspoons onion powder
1 1/2 teaspoons salt
12 cups elbow macaroni pasta, whole wheat, cooked

Preparation

  1. Make cheeze sauce – To a large pot with boiling water, add potatoes and carrots. Cook for 15 minutes until soft. Drain and reserve the cooking liquid.
  2. To a high-speed blender, combine beans, nutritional yeast, lemon juice, oil, garlic powder, onion powder and salt. Blend, adding reserved liquid one tablespoon at a time until desired consistency is achieved. Hold hot for service.
  3. For service, combine pasta and sauce. Portion 1 cup into a bowl.
