Serving size: 13.12 ounces

Ingredients
21 cups potato, French fry, curly cut, frozen
1 ½ cups oranges, juice
¼ cup chipotle peppers in adobo sauce, canned 2 each
6 tablespoons brown sugar
3 tablespoons apple cider vinegar
1 tablespoon cumin, ground
1 tablespoon oregano, dried, whole leaves
3 tablespoons canola oil
12 1/3 cups vegan meat crumbles
3 cups nacho cheez
1 ½ cups pineapple, tidbits, canned, in juice, drained

Preparation

  1. For fries: Prepare frozen curly fries according to package instructions.
  2. For al pastor: Combine orange juice, peppers, sugar, vinegar, cumin and oregano in a blender and blend until smooth.
  3. For meat crumbles: To a large sauté pan on medium-high heat add oil and vegan meat crumbles. Sauté crumbles for 3-5 minutes or until lightly browned. Add reserved al pastor sauce and cook until fully incorporated and browned. Hold hot for service.
  4. For nacho cheez: See recipe for “nacho cheez“. Prepare recipe and hold hot for service.
  5. For service: Portion 1 3/4 cup curly fries topped with 1/2 cup al pastor meat crumbles, 1/4 cup nacho cheez sauce, and 2 tablespoons pineapple tidbits.
