
Tasty Tempeh Taco Filling

Ingredients
4 1/4 cups Tempeh
1 cup Water
2 tablespoons taco seasoning
2 teaspoons Red Pepper Flakes
1 teaspoon Oregano, dried
1 teaspoon Sugar, granulated
Preparation
1. To Prepare Tempeh: In a skillet or pot filled with boiling water, or in a steamer; add tempeh and allow to cook for 10 minutes. Remove and cool slightly then crumble tempeh.
2. For Filling: In a large skillet over medium-high heat add tempeh.
3. Add water, seasonings and sugar to skillet and bring to a boil. Reduce heat to a simmer and cook for 20 minutes or until liquid has mostly evaporated. Remove and hold hot for service.
4. For Service: Serve 1/2 cup of filling on taco shell, tortilla or salad.
Serving information
Use a #8 scoop (1/2 cup) and serve on taco shell, tortilla or salad.
Each scoop provides 2 ounces meat/meat alternate.
